A workshop of experiences for the enhancement of cultural, agricultural and social biodiversity related to Italian Cuisine in the year of its recognition as a UNESCO World Heritage Site. <\/p>\n\n<p>Our cuisine aims to tell the story of our philosophy of seasonal and sustainable km0 cooking in every dish. The pasta and bread are made with organic Plato durum wheat grown on the farm, the extra virgin olive oil comes from our 5,000 centuries-old olive trees, and the wine expresses the identity of our historic vineyard, nourished by the minerals of the volcanic soil and the hilly microclimate, influenced by the nearby lake and sea. <\/p>\n\n<p>A new piece that rises on the twentieth-century building of l&#8217;Accademia and adds to a proposal of experiences that to the hospitality of agritourism and vacation home, combines a rich palimpsest of events and unique spaces to experience, among all the Oil Museum inside the Villino Rosso.<\/p>\n\n<p>Our farm was established on a 16th-century estate that covers 27 hectares within the area protected by the Castelli Romani Park. We cultivate according to certified organic methods, respecting the rhythms of nature, no chemicals, only manual and mechanical work and constant care of the soil. <\/p>\n\n<p>The terrace is a new place to live all year round, for a lunch or in special events, thanks to its privileged position it stands out in the sky opening the view to 180 degrees. An immersive experience that allows you to capture at a glance a postcard that stretches from the Historic Villa over the hills of the Castelli Romani to open onto the city of Rome. <\/p>\n\n<p>The architectural design is centered on the principle of sustainability that underlies the constant regeneration and enhancement process implemented in the complex, the plant system is powered by renewable energy from the photovoltaic roofing, and the movable glass windows ensure optimal con comfort in all seasons by prioritizing the natural ventilation of the environment.<\/p>\n\n<p>The layout sets as its basis the concept of circularity and identity of the place; custom-made wooden furniture is set among pastel-colored ceramics that are complemented by the use of local terracotta and travertine. The whole is ennobled by soft, certified fabrics and a totally natural greenery system. <\/p>\n\n<p>Even the supplies are km0, they are 20th-century design icons unearthed in the storage room of the Historic Villa, objects that come back to life thanks to expert restoration. A collection of iconic elements such as Thonet&#8217;s N.14 chairs, made of curved wood and Vienna straw, which accompany the S.33 characterized by chrome-plated steel tubing with a leather seat and back. The rationalism of the modern then complements the traditional furnishings of the Roman countryside, such as solid wood tables and display cases, which in turn are complemented by elegant armchairs in natural rattan and velvet, typical of the Ville Tuscolane.  <\/p>\n\n<p>The Mise en Place is that of tradition that opens to the future with awareness, no headshots for their own sake, plates, cutlery and crystal Made in Italy with a selection of natural fabrics.<\/p>\n\n<p>A mixture of forms, materials and tastes intended to restore a comfortable environment where the surrounding landscape is the synthesizing element of a history that has looked to the future since the 16th century.<\/p>\n\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>The Terrace of Villa Cavalletti is a place designed to interpret traditional agritourism in a contemporary way.
