The quality of Villa Cavalletti’s organic olive oil production has once again been recognized in Gambero Rosso’s 2025 *Oli d’Italia* guide. This award recognizes the daily work of the Tierre Organic Farm and its ongoing pursuit of products that capture the flavors and identity of the Castelli Romani.
The guide highlights three oils from Villa Cavalletti, each with its own award:
- Olio et Amo Oliveto Villa Cavalletti Bio has been awarded the ” Due Foglie Rosse” rating;
- Olio et Amo Villa Cavalletti Organic Gold Selection has been awarded the ” Due Foglie” certification;
- Tusculum IGP Organic Olive Oil from Rome was awarded the ” Una Foglia” prize.
At the heart of this achievement is Olio et Amo, the organic extra virgin olive oil produced in the olive groves of Villa Cavalletti. The estate is located in a hilly area of the Castelli Romani, about 350 meters above sea level, on volcanic soil linked to the history of the Laziian Volcano.
The olive grove spans the 27-hectare estate and includes thousands of trees, including centuries-old olive trees of the Leccino, Rosciola, and Frantoio varieties. Cultivation is carried out in accordance with the principles of organic farming, without chemical herbicides or synthetic fertilizers.
Harvesting is done manually, using electric olive-shakers and inverted-umbrella harvesters, which help protect the olives’ integrity and keep them clean by preventing contact with the ground. The fruit is then placed in ventilated crates and transported to the mill. After processing, the oil is stored in stainless steel containers under a nitrogen blanket to prevent oxidation, before being bottled in dark glass or cans.
The inclusion in the *Oli d’Italia 2025* guide highlights three distinct lines of Villa Cavalletti’s production: the Organic Olive Grove, the Gold Selection, and the Tusculum IGP Organic Rome Olive Oil. Three olive oils united by their connection to the land, their commitment to preserving the olive-growing heritage, and the care devoted to every stage of production.
The Gambero Rosso awards thus mark another milestone in Villa Cavalletti’s journey to preserve the estate’s long-standing agricultural heritage and transform it into a contemporary organic operation, deeply rooted in the Castelli Romani region.
