Villa Cavalletti is a member of the Vignaioli in Grottaferrata association, formed by five producers united by a passion for wine and a desire to promote the region’s unique winemaking potential.
Grottaferrata boasts a terroir in which soil, climate, history, and traditions all contribute to the quality of its wines. The area has been shaped over hundreds of thousands of years by the activity of the Laziale Volcano, which has left behind soils rich in lava, cinder, lapilli, and minerals. The Villa Cavalletti hillside is characterized by ancient volcanic cones and eccentric vent openings, volcanic agglomerates, and layers of lapilli: a geological structure that helps impart freshness, savory notes, minerality, and aging potential to the wines.
Set within this landscape, Villa Cavalletti has been restoring the historic Jesuit vineyard since 2014. The vineyard is cultivated using organic methods. The soil is worked exclusively with mechanical equipment and enriched through green manure from legumes, which are sown in the fall and tilled into the soil in the spring. The vines are trained using the Guyot and spurred cordon methods, respecting the natural balance of the soil.
The association brings together Villa Cavalletti, Agricoltura Capodarco, La Torretta, Gabriele Magno, and Emanuele Ranchella: five entities with different histories, experiences, and methods, each capable of expressing the many oenological nuances of Grottaferrata. The collaboration aims to promote awareness of local wines as a cultural expression and a fundamental component of the region’s tourism offerings, while simultaneously supporting sustainable agriculture, the circular economy, and the wine sector’s response to climate change.
Crypta was born from the synergy among producers—a collective wine created through the contributions of various wineries. Its name evokes the Crypta Ferrata of the Abbey of San Nilo, a historic and architectural symbol of the city. The label represents not a single winery, but an entire region and the ability of its winemakers to work together.
Through vineyard tours, tastings, culinary experiences, hospitality, and cultural activities, Villa Cavalletti and the other producers weave a shared narrative of Grottaferrata: a journey through volcanic landscapes, agriculture, wine, and local identity. The association’s commitment was recognized in 2025 with the Terre Tuscolane Award in the “Action” category.
