The distinctive character of pecorino cheese meets the aromas of extra virgin olive oil: on the panoramic terrace of Villa Cavalletti, a lunch dedicated to discovering flavors and pairings, guided by ONAF—the National Organization of Cheese Tasters, Rome Delegation.
A sensory journey to explore the richness of sheep’s-milk cheeses, recognize their aromas and textures, and discover how processing and aging transform their flavor. ONAF tasters will guide guests through the tasting, offering insights into how to appreciate the characteristics of the cheeses and how they pair with the olive oil.
To accompany the meal, Villa Cavalletti’s OLIO ET AMO extra virgin olive oils, which create a harmonious interplay of intensity, aromas, and balance. An opportunity to explore how two traditional products can complement each other and add new nuances to every bite.
The tasting will be accompanied by a themed menu created by Chef Claudio Cotini of Agriturismo Villa Cavalletti, designed to showcase the pairing of pecorino cheese and extra virgin olive oil through culinary creations. The culinary tour will showcase the estate’s products, including Platone organic wheat, and will be paired with wines from Villa Cavalletti.
Guests will be welcomed on the panoramic terrace of Villa Cavalletti, set within the Grottaferrata estate: a place to share the pleasure of fine dining and learn more about the region’s products and culture.
For the occasion , the Olive Oil Museum, located inside the Frantoio del Villino Rosso, will also be open to visitors, allowing you to round out the day with a tour dedicated to the history and traditions of olive oil production.
