Oliveto Storico di Villa Cavalletti, Slow Food Secular Olives Presidium, Grottaferrata -Rome.
Cultivars: Rosciola, Moraiolo, Leccino
Minimum shelf life: 18 months after bottling
Harvest period: Late September to mid-October
Harvesting mode: Hand-burning with electric harvester and manual umbrella
Production Cycle:
Cold extraction of extra virgin olive oil by continuous cycle, storage in temperature-controlled stainless steel tank under nitrogen.
Process information: The extraction temperature does not exceed 25 °C.
Storage Methods: Store in a cool place away from light and heat sources.
