Description

Olive provenance:
Historic Olive Grove of Villa Mondragone.

Cultivars: Frantoio, Moraiolo, Carboncella.

Minimum shelf life: 18 months after bottling

Harvest period: Mid-October – Early November

Harvesting mode: Hand-burning with electric harvester and manual umbrella

Production Cycle:
Cold extraction of extra virgin olive oil by continuous cycle, storage in temperature-controlled stainless steel tank under nitrogen.

Process information: The extraction temperature does not exceed 24 °C.

Storage Methods: Store in a cool place away from light and heat sources.

Sensory characteristics
Color: Leaf green tending to golden yellow.

Flavor: Extra Virgin Olive Oil with “medium” green fruitiness, “medium” bitterness and “medium” spiciness. Balanced.
