Olive provenance:
Tenute di Colle Smeraldo and Oliveto Storico Villa Cavalletti, Slow Food Secular Olive Presidium, Grottaferrata -Rome.

Cultivars: Rosciola, Itrana, Moraiolo

Minimum shelf life: 18 months after bottling

Harvest period: Late September to mid-October

Harvesting mode: Hand-burning with electric harvester and manual umbrella

Production Cycle:
Cold extraction of extra virgin olive oil by continuous cycle, storage in temperature-controlled stainless steel tank under nitrogen.

Process information: The extraction temperature does not exceed 24 °C.

Storage Methods: Store in a cool place away from light and heat sources.

Sensory characteristics
Color: Leafy green tending to golden yellow.
Smell: Medium-intense green fruitiness is perceived on the nose, enhanced by vegetal notes of leaf, herbs, fresh almonds, artichoke and tomato.
Flavor: Extra Virgin Olive Oil with “medium” green fruitiness, “medium” bitterness and “medium” spiciness. Balanced.

Source of Vitamin E, contributes to the protection of cells from oxidative stress.
